{"id":112,"date":"2008-10-29T11:17:01","date_gmt":"2008-10-29T18:17:01","guid":{"rendered":"https:\/\/melinakantor.com\/?p=112"},"modified":"2008-10-29T15:01:51","modified_gmt":"2008-10-29T22:01:51","slug":"fasoulakia","status":"publish","type":"post","link":"https:\/\/melinakantor.com\/?p=112","title":{"rendered":"Fasoulakia"},"content":{"rendered":"<div>\n<h2><span style=\"color: #000080;\"><em>Green beans and potatoes in tomato sauce<\/em><\/span><\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft\" style=\"float: left; border: 0;\" src=\"https:\/\/melinakantor.com\/wp-content\/uploads\/2008\/06\/greekkey31.jpg\" alt=\"\" width=\"545\" height=\"15\" \/><\/p>\n<p>\u00a0<\/p>\n<p><!--StartFragment--><\/p>\n<p class=\"MsoNormal\">Today on the <a href=\"https:\/\/melinakantor.com\/?p=104\">Recipe Week<\/a> menu &#8212; a Greek dish called Fasoulakia! \u00a0<\/p>\n<p class=\"MsoNormal\">It&#8217;s one of my favorite recipes. \u00a0It&#8217;s healthy, pretty, delicious, and it&#8217;s a good dish to make when you&#8217;re expecting a crowd.<\/p>\n<p class=\"MsoNormal\"><img decoding=\"async\" class=\"alignright\" style=\"float: right; border: 0; margin: 15px;\" src=\"https:\/\/melinakantor.com\/wp-content\/uploads\/2008\/10\/beans.jpg\" alt=\"\" width=\"200\" \/><\/p>\n<p class=\"MsoNormal\"><span><strong><em>Ingredients:<\/em><\/strong><\/span><\/p>\n<ol>\n<li>1-1.5 lbs. green beans<span>\u00a0 <\/span>(one full plastic bag)<\/li>\n<li>1 head of garlic (at least)<\/li>\n<li>2 medium onions<\/li>\n<li>1 large can of tomatoes (or fire roasted tomatoes)<\/li>\n<li>1 box vegetable broth<\/li>\n<li>4-5 potatoes<\/li>\n<li>olive oil<\/li>\n<li>salt<\/li>\n<\/ol>\n<p class=\"MsoNormal\">\u00a0<\/p>\n<p class=\"MsoNormal\"><span><strong><em>Method:<\/em><\/strong><\/span><\/p>\n<p class=\"MsoNormal\"><span>Clean and cut the tips off the beans.<span>\u00a0 <\/span>Sweat the onions and garlic in olive oil.<span>\u00a0 <\/span>Put the tomatoes trough a strainer over the pot and mash them up and get the juice out (this helps create the sauce).<span>\u00a0 <\/span>Add the tomatoes to the pot.<span>\u00a0 <\/span>Add beans and bring to a boil.<span>\u00a0 <\/span>While this is happening, cut the potatoes lengthwise into wedges.<span>\u00a0 <\/span>Add potatoes to pot.<span>\u00a0 <\/span>Cover mixture with vegetable broth.<span>\u00a0 <\/span>Bring back to boil, then reduce heat and let simmer for 45 min. or until potatoes are fully cooked.<\/span><\/p>\n<p class=\"MsoNormal\"><span>When the beans and potatoes are ready, remove them from the pot with a slotted spoon.<span>\u00a0 <\/span>Bring the sauce to a boil and reduce until it thickens.<span>\u00a0 <\/span>Mix the sauce back into the beans.<\/span><\/p>\n<p class=\"MsoNormal\">Next up &#8212; Hummus (not Greek, but it&#8217;s good so why not?)<\/p>\n<p><!--EndFragment--><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" style=\"vertical-align: middle; border: 0;\" src=\"https:\/\/melinakantor.com\/wp-content\/uploads\/2008\/07\/blackolive_small.jpg\" alt=\"\" width=\"50\" height=\"32\" \/><\/p>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>Green beans and potatoes in tomato sauce \u00a0 Today on the Recipe Week menu &#8212; a Greek dish called Fasoulakia! \u00a0 It&#8217;s one of my favorite recipes. \u00a0It&#8217;s healthy, pretty, delicious, and it&#8217;s a good dish to make when you&#8217;re expecting a crowd.
